Lentil Rice and Peas
Lentil Rice and Peas with Ackee
This is not your normal rice and peas. This is a fully flavored rice dish with coconut milk and a little hint of pepper. This recipe is full proof, no more worry the rice was not cooked enough, or the rice being extra sappy. You don’t have to monitor the pot to get it to that texture of fluffy perfection. This recipe is easy and delicious. The lentils add texture and nutrition. While this is not an authentic rice and peas recipe, the flavors do not disappoint. It’s jammed full of authentic Caribbean flavors.
1 cup basmati or jasmine rice
1 cup water
1/4 cup brown lentils
1/2 cup coconut milk (I used AROY-D brand)
1 tbsp Better than Bouillon vegan sauteed onions or no chicken broth
1 scotch bonnet pepper (remove stem)
3 springs fresh time
3 stems scallion or green onion (large chop)
1/4 tsp salt
Place all of your ingredients in an electric rice cooker. Cook on the whole grain setting. Usually cooks for 60 minutes. When done fluff with fork.
