Gluten Free Pancakes

These pancakes are quick and easy to make. With only 4 ingredients you can create these delicious gluten free pancakes and not worry about the guilt. No more feeling bloated, guilty or deprived when enjoying pancakes. They’re loaded with the goodness of chickpea flour, which is rich in protein and fiber to keep you full longer. Start enjoying Pancakes again.

1 ripe banana

1/3 cup chickpea flour

1/2 tsp baking powder

1/2 cup water

1/2 tsp grapeseed oil

On medium heat add oil to a skillet.

In a mixing bowl mash the banana to a creamy consistency. Add the chickpea flour and baking powder, stir to combine. Pour half the water into the mixture slowly and stir to combine. Add more water, depending on the consistency you desire. You probably won’t use all of the water. Add the batter to skillet in 3 to 4 inch circles. Use a large spatula to flip pancake once the edges become browned. Continue the same procedure to the rest of the batter. Serve topped with your favorite fruit, vegan butter and maple syrup.
