Rasta Pasta
Rasta Pasta is a classic Jamaican dish that typically uses heavy cream, penne pasta, parmesan cheese, jerk seasoning and colorful bell peppers. But guess what? I made it vegan!!! This Caribbean inspired pasta dish is full of flavor and can be customized any way you like. Rasta Pasta gets it's name from the traditional rasta colors red, green and gold (yellow). It's so Pretty 😍 The colors are said to represent the natural beauty of Africa. The sauce is similar to alfredo sauce but with a lot more flavor.

Ingredients:
2 cups Penne pasta
1 tbsp grapeseed oil
1/2 cup green bell peppers ( cut 1/2 the peppers in strips and the other half diced)
1/2 cup red bell peppers ( cut 1/2 the peppers in strips and the other half diced)
1/2 cup yellow bell peppers ( cut 1/2 the peppers in strips and the other half diced)
1/2 yellow onion chopped
3 cloves garlic chopped
1/2 cup coconut milk ( I like Chaokoh brand)
1/2 cup pasta water
1 tsp jerk seasoning ( I like Walkerswood brand)
1 tsp better than bouillon vegan chicken base
8oz Baby Bella mushroom cut into quarters
1/4 tsp black pepper
The method:
Cook Pasta according to the directions on package.
Save 1/2 cup of the pasta water.
On medium heat in a large skillet add grapeseed oil. Add the bell peppers and onion to the skillet. Allow the peppers to cook for 3-5 minutes. Now add the chopped garlic. Allow to cook for 2-3 minutes. Add the pasta water, coconut milk and better than bouillon vegan chicken base. Stir to combine. Add the cooked pasta. Stir to combine sauce and pasta. Add vegan parmesan cheese and black pepper. Stir to combine allowing the cheese to melt. Once the cheese have melted remove from heat. Add the remainder of chopped bell peppers.
