Curry Jackfruit Chick’n

Curry chicken was one of my favorite meals growing up and also as an adult. My family shares the same love of this Caribbean dish. I have made vegan versions of curry chick'n using various meat substitutes. However Jack and I have a special relationship, so I had to give it a try. I have a special way of keeping the jackfruit firm and not mushy😉 This Curry Jackfruit Recipe is the perfect combination of rich flavors on one plate. This recipe is the one to make when you want a taste of the islands.

Jackfruit prep ingredients:

1 can young green jackfruit

1 tbsp grapeseed oil

1 tbsp liquid aminos

Black pepper

Curry Gravy ingredients:

1 tbsp grapeseed oil

1/2 yellow onion chopped

3 cloves garlic chopped

1/2 russet potato peeled and diced

1/2 tsp black pepper

2 tbsp curry ( I use Chief brand)

1/2 tsp ground cloves

1/2 tsp cumin

1/2 tsp allspice

1 scotch bonnet pepper remove stem

1 tbsp Better Than Bouillon chicken base (vegan)

1 cup water 1/2 cup coconut milk (I use Chaokoh brand)

3-5 sprigs of fresh thyme

1 stalk green onion/ scallions rough chop

1 carrot diced / or shredded carrots

Set oven to 400 degrees.

Drain jackfruit from can and place in a bowl of water and allow to sit for at least 30 mins. This should remove the briny taste. Once the 30 mins have passed rinse and squeeze most of the water from the jackfruit using a dish towel. Place jackfruit in a bowl and season with liquid aminos black pepper and oil. Place jackfruit in a oven safe dish and bake for 25 minutes flipping over mid way to brown on both sides.

On medium heat In a dutch oven pot add oil onions and garlic. Allow to cook until onions are translucent. Add curry and combine cook for about 30 seconds. Add potatoes and combine. cook for about 2 minutes. Add ground cloves cumin all spice and the scotch bonnet pepper. Combine ingredients. Add the water and chicken bouillon base. Combine, add the coconut milk and black pepper. Allow to cook for 2 minutes. Add thyme and scallion. Cook for 5-7 minutes or until potatoes are tender. Add the cooked jackfruit. Gently stir to combine.
