Pesto Bowtie Pasta
This recipe comes together in less than 20 minutes. Toasted walnuts gives this pesto delicious full flavor. This walnut pesto recipe is perfect for sandwiches, pasta and more. Bow Tie pasta makes a delicious combination in this recipe. I make this pesto pasta all summer long for picnics, long road trips or a quick dinner. Enjoy the many combinations of delicious meals this recipe offers.
8 oz of bow tie pasta (cook using the directions provided on package)
1/4 cup walnuts toasted
1 tbsp nutritional yeast
3 garlic cloves
3 cups loosely packed fresh basil
juice of 1 lemon
1/4 cup olive oil
salt and pepper to taste
In a dry skillet on medium heat, toast the walnuts. Toast about 2 minutes, remove from heat and allow to cool. In a food processor, combine all your ingredients. Blend in a food processor 1-2 minutes or until your desired consistency. Add Pesto to cooked pasta, stir to combine. Serve and enjoy as a side or main dish. To serve as a main add cooked proteins like tempeh, tofu or mushrooms.
