Curry Sweet Potato Seitan


This Curry Sweet Potato Seitan is a rich and delicious dish that will warm you from the inside out. The seitan is simmered in vegan beef broth, onions, garlic and spices like cumin and ground cloves. A delicious satisfying meal anytime of the year.

16 oz Seitan cooked and cut into cubes (see homemade Seitan recipe)

1 sweet potato peeled cut into cubes

1/2 yellow onion chopped

3 garlic cloves garlic chopped

3 sprigs fresh thyme

2 stalks green onion chopped

1 carrot cut into small pieces

2 tbsp curry powder

1 cup vegan beef broth

1 cup coconut milk (full fat)

1/2 tsp black pepper

1/2 tsp cumin

1 tbsp ketchup

1 tbsp better than bouillon

1 tsp liquid smoke

1/4 tsp ground cloves

1 scotch bonnet pepper

1 tbsp grapeseed oil

On medium heat in a dutch oven pot add oil. Add Seitan and scotch bonnet pepper, brown for for 1 minute. Add potatoes and carrots, cover and cook for 3-5 minutes. Add onions, garlic, thyme, green onions, curry powder, coconut milk and vegan beef broth. Stir to incorporate all the ingredients. Add black pepper, cumin, ketchup, bouillon, liquid smoke, and ground cloves. Cover and cook 7-10 minutes or. until the sweet potato is cooked. Serve over white rice, or eat with roti.
