Vegan Crepes
Crepes with strawberries, blueberries, powdered sugar, and balsamic drizzle
Crepes are one of my favorite things to enjoy for brunch or an early dinner. They seem so fancy but are super easy to make. You can make them sweet and add berries, jams, and powdered sugar. Or you can also make them savory. Serve savory crepes. with scrambled eggs, veggies or tofu. The recipe combinations are endless.
3/4 cup flour
1/3 cup chickpea flour
3/4 cup water
1 cup almond milk
1/2 tsp salt
2 tsp sugar
1 tsp vanilla
3 tsp butter for frying
Place all your ingredients in a blender starting with the liquids first. Blend for 1 minute.
Heat a non stick skillet on medium low heat. Melt 1/2 tsp of butter in the pan and then pour 1/3 cup of the crepe batter in circles in the pan and immediately swirl the pan around until the batter is evenly covering the bottom of the pan. Allow the crepe to cook 2-3 minutes until it appears dry and loose on the sides. Flip your crepe and cook another 2 minutes on the other side. Continue the same procedure with the rest of the batter. Makes approximately 6 crepes. Serve with your choice of fillings.
