Cheesy Lentil Walnut Meat Sauce over Penne Pasta

This sauce is hearty cheesy, meaty and full of flavor. You will not miss the meat. Nutritionally dense and satisfying. You can serve this meat sauce over pasta or a baked potato. Great for feeding a large hungry group or satisfying some one who is transitioning to a plant based lifestyle.

26 0z jar marinara sauce

1/2 cup dry lentils

1 cup walnuts

2 tbsps nutritional yeast

1 not chick’n bouillon

1/2 yellow onion

1/4 green bell pepper

1/4 red bell pepper

4 cloves of garlic

1/2 tsp black pepper

1 tbsp better than bouillon sautéed onions

1 tbsp grapeseed oil

On medium heat in a sauce pan add lentils not chick’n bouillon and water, cook for about 20 minutes or until lentils are soft.

In a food processor add walnuts and nutritional yeast. Blend on medium for about 20 seconds. Remove and set aside.

In a food processor add onions, garlic and peppers, blend for no more than 15 seconds.

On Medium heat in a large pot add oil. Add the blended onions, garlic and peppers from the food processor. Cook for about 3 minutes. Add the walnuts nutritional yeast cheese mixture, black pepper and better than bouillon. Stir and allow to cook about 3-5 minutes. Add the marinara sauce. Stir and cook for 3-5 minutes.

Serve with your favorite pasta.
