Baked Falafel with Tzatziki Dip

Baked falafels are a type of Middle Eastern vegetarian dish made from ground chickpeas or fava beans, mixed with herbs and spices, and formed into small patties or balls. Unlike traditional fried falafels, baked falafels are prepared by baking them in the oven, which makes them a healthier alternative.

The chickpea mixture used in baked falafels typically includes a combination of ingredients such as fresh parsley, cilantro, garlic, onion, cumin, coriander, and salt. The mixture is then formed into small patties or balls and placed on a baking sheet, which is then baked in the oven until golden brown and crispy.

Baked falafels are often served as part of a mezze platter or as a sandwich filling, typically accompanied by pita bread, hummus, tahini sauce, tzatziki dip and a variety of fresh vegetables such as lettuce, tomatoes, cucumbers, and pickles. They are a popular vegetarian and vegan option, as they are packed with protein, fiber, and nutrients.

2 cups dried chickpeas (Do NOT use canned or cooked chickpeas)

1 tbsp baking soda

1 cup fresh parsley leaves, stems removed

1 cup fresh cilantro leaves, stems removed

1/2 yellow onion 

1 bulb of garlic roasted 

Salt to taste

1 tbsp ground cumin

1 tbsp ground coriander

1 tsp cayenne pepper

1 tbsp baking powder

1 tbsp chickpea flour 

Oil for basting 

(One day in advance) Place the dried chickpeas and baking soda in a large bowl filled with water to cover the chickpeas by at least 2 inches. Soak overnight for 24 hours (longer  if the chickpeas are still too hard). When ready, drain the chickpeas completely and pat them dry.

Add the chickpeas, herbs, onions, garlic and spices to the large bowl of a food processor fitted with a blade. Run the food processor 10 seconds, then scrape down ingredients in food processor. Repeat this time 20 seconds, Repeat 20 more seconds until all is well combined forming a the falafel mixture.

Transfer the falafel mixture to a container and cover tightly. Refrigerate for at least 1 hour or (up to one whole night) until ready to cook.

Just before frying, add the baking powder and chickpea flour to the falafel mixture and stir with a spoon.

Scoop tablespoonfuls of the falafel mixture, I use a ice cream scoop and form into balls. It helps to have wet hands as you form the patties.

Place on a parchment lined cookie sheet and bake in the oven at 350 degrees for 30 minutes.
