Stuffed Butternut Squash w/ Walnut Meat & Quinoa

This stuffed butternut squash is filled with love. The stuffing is packed with deliciously seasoned hearth healthy walnuts. Protein packed quinoa and parmesan cheese. This stuffed squash recipe is loved by vegans and non vegans alike.

1 cup cooked quinoa

1 butternut squash

1 cup walnuts

2 cups white mushrooms chopped

1/2 yellow onion chopped

3 garlic cloves chopped

1 cup vegan parmesan cheese

2 tbsp vegan korean bbq sauce

2 tbsp grapeseed oil

salt & pepper to taste

chopped green onion for garnish

Preheat oven to 400 degrees. Cut butternut squash length wise and remove seeds. Place butternut squash in a baking dish, drizzle with grapeseed oil and place cut side down. Place butternut in the oven and bake for 1 hour. In a bowl add water to walnuts and set aside for about an hour.

In a skillet on medium heat add grapeseed oil, onions, garlic and mushrooms. Cook until translucent.

Drain water from walnuts. Add walnuts to a food processor and blend for 10-15 seconds.

Add walnuts, cooked quinoa and Korean bbq sauce to the skillet with cooked onions and mushroom mixture. cook for 1-2 minutes. Add salt and pepper if more seasoning is preferred. Remove from the heat. Add parmesan cheese and combine mixture.

Place butternut squash on serving dish. Scoop out some of the squash to allow for mixture. Add scooped butternut squash to the mushroom parmesan mixture.

Add the quinoa, mushroom mixture to the butternut squash.

Garnish with the chopped green onions.
