Nopales: Cactus Salad
I’m always looking for ways to create nutrient dense healthy foods delicious.
When I discovered nopales (cactus) I wanted to create an easy recipe everyone can enjoy at any occasion.
Nopales are high in antioxidants, vitamins, and minerals. they are a healthful addition to a balanced diet and may help decrease blood sugar, reduce inflammation, and lower cholesterol.
This recipe is so tasty no one will even guess your serving cactus. You can eat it as a main dish or side dish and with any meal any time of the year.
4 cactus cleaned of thorns
4 cloves of garlic sliced in half
1/2 onion
1 tablespoon salt
1/4 cup scallions chopped
1/4 chopped cilantro
1/4 cup rice vinegar
1 tablespoon dried oregano
10 ounce pack of frozen corn
1 teaspoon black pepper
1 teaspoon himalayan salt
1 can black beans (rinsed)
1 jalapeno chopped
3 avocados cut in cubes
Cut nopales into 1/2 inch squares. Place nopales garlic, onion, and salt in a sauce pan with water enough to cover the nopales, cook for 20 mins. Once the nopales is cooked, strain water off. In a colander run cold water over the nopales to stop the cooking process. Remove the garlic and onion pieces place in a large bowl. Add all of your remaining ingredients to the bowl of cooked nopales and combine with a large spoon. Add salt and black pepper to suite your taste. This recipe can last in the refrigerator for up to 3 days.
