Vegetable Stir Fry Noodles w/Soy Curls
I love to fix a quick delicious meal any day of the week. This Vegetable Stir Fry is just that. Quick easy and delicious. Made with nutritious soy curls, you get the added protein, fiber and iron your body needs to keep going strong. Soy Curls is an excellent meat substitute and can be added to recipes where you would like to replace chicken or beef. This meal is filling for your whole family, everyone will be completely satisfied, even your meat eaters.
4 oz soy curls
10 oz instant noodles
1/4 cup red bell peppers chopped
1/4 cup green bell peppers chopped
1/4 cup yellow onions chopped
4 cloves garlic chopped
8 oz package mushrooms sliced
1/2 tablespoon fresh grated ginger
1 1/2 cup broccoli florets
1 stalk celery sliced diagonal
1/4 cup liquid aminos
1 tbsp sesame oil
2 tbsp teriyaki sauce
1 tsp garlic powder
1 tsp onion powder
1 tsp liquid smoke
3 tbsp grapeseed oil
Add the soy curls to water and set aside. Soak for at least 10 minutes.
In a medium sauce pan on medium heat add water for noodles. Bring to a boil.
On medium heat in a large skillet add grapeseed oil. Remove soy curls from water and squeeze excess water from the soy curls. Add the soy curls to skillet with heated grapeseed oil. Allow the soy curls to brown about 4 minutes. Add liquid aminos and liquid smoke. Stir to incorporate, add onion powder and garlic powder. Now add onions, and mushrooms. Allow to cook for 2 to 4 minutes. Add bell peppers and celery. continue cooking.
Add noodles to boiling water stir. Allow to cook approximately 3-5 minutes.
Add garlic and ginger, stir to combine. Now add Broccoli and liquid aminos to taste. Add sesame oil and stir to combine all ingredients, allow to continue to cook.
Remove noodles from cooking and strain water. Add the noodles and teriyaki sauce to the skillet with the vegetables. Turn off the heat and use a large spoon to combine all the ingredients. Serving suggestion, sprinkle sesame seeds and add a little sriracha hot sauce.
