Simple Nopales Seitan Stir Fry

Looking for a simple, quick and easy addition to your weekly menu? Well, look no further because this protein and fiber packed meal is so flavorful. This simple recipe only takes a few minutes to prepare. Nopales, otherwise known as cactus, is used traditionally in Mexican dishes. It’s a very versatile vegetable; you can use it in anything from salads, salsas or stir fries.

3 nopales cleaned of thorns

1 package 8 ounce traditional seitan strips

1 red bell pepper cut into strips

1 large onion (half cut into strips)

6 cloves of garlic (3 sliced / 3 chopped)

1 tablespoon salt

1/2 tablespoon fresh grated ginger

3/4 cup water

1/4 cup low sodium soy sauce

1 tablespoon teriyaki sauce

1 tablespoon liquid aminos

1 tablespoon sugar

1 tablespoon cornstarch

1 tablespoon sesame oil

1 tablespoon grape seed oil

sesame seeds to garnish

Cut nopales into strips. Place nopales, garlic, the whole half of the onion and salt in water enough to cover the nopales. Cook for 20 minutes.

Once the nopales are cooked, strain the water. In the colander, run cold water over the nopales to stop the cooking process. Remove the garlic and onion pieces and place in a large bowl.

In a bowl combine the chopped garlic, ginger, water, soy sauce, teriyaki sauce, liquid aminos, sugar, cornstarch, and sesame oil. Set aside.

On high heat, add grape seed oil to a wok or skillet. Then add the seitan, use a spatula to constantly stir it. Once the seitan is brown, add the onions, red bell peppers, and the nopales. Constantly stirring allow to cook for about 3 minutes. Now add the sauce mixture. The mixture will begin to thicken as it heats up. Once the sauce thickens up immediately remove from heat.
