Curried Butter Beans with Sweet Potato
Sweet potatoes are an excellent source of vitamins A and C. They are also a good source of fiber, vitamins B-6 and potassium. Paired with protein packed butter beans, this recipe is full of muscle building goodness. However the sweetness of coconut milk and the warmth of curry will have you wrapped in comfort. This quick and easy recipe is perfect for an easy weeknight dinner.
Ingredients and method:
1 tbsp grapeseed oil
1 can butter beans
1 sweet potato cut into cubes.
1/2 yellow onion chopped
3 garlic cloves diced
5 sprigs of thyme wrapped in thyme
1 scotch bonnet pepper remove stem
1 stalk scallion/ green onion chopped
1 cup water
1/2 tbsp better than bouillon chicken base
1/2 cup coconut milk (full fat)
1/4 tsp cumin
1/2 tsp black pepper
2 tbsp curry powder
On medium heat in a cast iron skillet add grapeseed oil. Add onions and garlic, allow onions to cook until translucent. Add sweet potato cook 2-3 minutes. Add curry powder, stir to combine. Add coconut milk, water, better than bouillon, black pepper and thyme. Cook on medium low for 7-10 minutes. Add butter beans and scallions, cook for another 3 minutes.
Enjoy!
Serve over steamed jasmine or steamed quinoa.
