Banana Fritters
Banana Fritters sprinkled sugar
Move over banana bread you’ve got competition. Banana Fritters are a great way to use up your ripe bananas. Growing up in Jamaica banana fritters were a big part of my childhood and I’m excited to share this recipe with you all. This is a super easy recipe that can be eaten as a snack or an excellent addition to your Sunday brunch.
2 ripe bananas
1 cup all purpose flour
1/2 tbsp baking powder (optional for fluffier fritters)
2 tbsp brown sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla
grapeseed oil for frying
In a large bowl mash the bananas, to a puree consistency with some whole pieces still left in the mix. Add the sugar, cinnamon, nutmeg, and vanilla, mix to combine. Add the flour and baking power, mix to combine. Do not over mix the batter.
Cooked Banana Fritters
On medium heat add oil to the skillet. Use a large spoon to add the batter to the hot oil. Do not crowd the skillet. Brown the fritter on both sides. Remove cooked fritter and place on a plate lined with paper towel to absorb the excess oil.
