Quinoa Fried Rice

I can’t think of a better way to enjoy this take out favorite and still get tons of flavor and nutrition. This quick and easy recipe is better than take out. With ingredients you’ll probably have on hand. Quinoa is high in protein and fiber. This recipe comes together so fast and it’s so filling.

1 cup cooked quinoa a couple days old (see quinoa recipe)

Fresh broccoli florets

frozen peas and carrots

liquid aminos or soy sauce

green onions chopped

yellow onions chopped

2 tbsp grapeseed oil

There are no measurements on the ingredients because the suggestion is use desired amounts.

On high heat in a wok or large skillet add the oil. Add the cooked quinoa, stir the quinoa with a large spoon to heat through. Add the yellow onions, cook for a minute. Add the broccoli, stir to heat through cook for about 2 minutes. Add the frozen peas and carrots, season to taste with soy sauce or liquid aminos. Stir well to incorporate all the ingredients. Remove from heat add chopped green onions and serve immediately.
