Tofu Scramble

Absolutely Delicious Tofu Scramble

If you miss scrambled eggs, you’ll love this recipe.

I don’t know about you but, I missed eating scrambled eggs especially on the weekends. I remember waking up and smelling the peppers and onions throughout the house. Saturdays mornings was especially the day I enjoyed a big breakfast with scrambled eggs right before we head out for shopping. So if you enjoyed eggs and or have recently gone vegan, I hope you enjoy this recipe! This tofu scramble really hits the spot for me, and I’m sure it will for you as well.

1 block firm tofu pressed and mashed with potato masher

1/4 cup red bell pepper chopped

1/4 cup green bell pepper chopped

1/4 yellow onion chopped

1 1/2 cup white mushrooms chopped

2 stacks green onion chopped

1/2 tsp turmeric

1 tbsp grapeseed oil

1/4 tsp cumin

salt and black pepper to taste

On medium heat in a skillet add the grapeseed oil. Add the bell peppers, onions and mushrooms. Allow to cook for about 3-5 minutes. Add the mashed tofu, stir to combine allow to cook for 5 minutes. Add the turmeric and cumin, gently stir to combine. Add salt and black pepper to taste. Remove from heat and add green onions.

Serve with toast, vegan sausage or add to a a burrito wrap for a delicious breakfast burrito.
